SAPORIUM Firenze

This is one of those secrets I no longer can keep. Saporium, an experience unlike any I’ve ever had. My third visit this past June prompted this post.

At Saporium, the experience begins long before you take your seat. It begins in the soil of Borgo Santo Pietro, where organic gardens, orchards, vineyards and an artisan dairy nurture the ingredients that define the table. Chef Ariel Hagen lets the land speak, bringing its freshness, honesty and unmistakable Tuscan soul to every plate.

Then comes the theater—and, for me, the pleasure of seeing a familiar friend at work. Over time, I’ve cultivated a genuine friendship and rapport with Chef Hagen, making his personal touch especially meaningful. His warmth extends beyond the customary hello and farewell, creating a connection that makes each visit feel wonderfully personal.

And then, there is the invitation: to slow down, settle in and savor. Saporium Firenze brings the spirit of Borgo Santo Pietro to Florence, where soil, season, friendship and craft meet beautifully. It’s been an amazing privilege to have developed a rapport and friendship with Chef Hagen as it has been as amazing and inspiring as his cuisine.
