One of the most rewarding and gratifying experiences I’ve been repeating is getting to know the masterminds behind exceptional cuisine by spending time in their space, and having reverence for their passion and commitment to excellence.
As a sommelier, who grew up in south Georgia and had every opportunity to be in touch with nature/terroir, I have an appreciation for all that is natural and those who respect nature. Our “Five Senses Experience” with Chef Schettino which consisted of a casual stroll through the markets of Bologna and a cooking class, spoke to and highlighted key elements that distinguishes the accomplished and skilled who turn the ordinary into the extraordinary as it’s second nature to do so.
Our stroll through Bologna to meet special purveyors and to taste special selected foods was an amazing eye-opening and highly recommended experience. The hands on and up close interactions were the most transformative exchanges with the purveyors, as well as the cooking class and lunch experience with Chef Schettino.
One of the amazing masterminds behind designing and curating this in depth “Five Senses” experience with Chef Schettino, was Ms. Miriam Costantino from guests relations, who accompanied us as we ventured through the streets of Bologna. Having this one-on-one opportunity changed everything and made for a more meaningful and informative outing. I’ve decide this shall be on repeat mode whenever in Bologna – – I highly recommend the experience. Your senses will forever be changed and enhanced to experience cuisine in a more personal and appreciative space. You’re going to love it if you’re willing to put in the work, have a little fun and enjoy some incredible fresh and tasty cuisine.

As we made our way back to prep for the cooking class, I came across these musical icons who shoulders I stand on and draw deep inspiration. Ahhhhhh – – YES – – JAZZ!!!!!









Back at Grand Hotel Majestic – già Baglioni in our private room, we set out to make the traditional pasta of Bologna. But first a little prosciutto and vino!!!!!



Chef Schettino took us on an amazing journey as we prepared a delicious and unforgettable lunch starting with the making of the traditional Tortellini, and ending with a Bolognese cutlet that was simply the most incredible veal cutlet I’ve consumed.

This was priceless as the experience was above and beyond what was expected and done with flawless professionalism, seamlessly woven with welcoming hospitality and a great deal of joy!!! And I have to say a happy Chef makes for an unforgettable moment worth repeating many times over. Chef, shall we do this all over again – – April 2025??? Cheers!!!!!
