L’Ambroisie (Lunch)

Wednesday, May 29th

Ahhhh, time for more star gazing — Michelin, to be exact.  We are off to L’Ambroisie to experience the cuisine of Chef Mathieu Pacaud, son of famed Chef Bernard Pacaud.  We were extremely fortunate to have connected with a friend in Paris who happens to be great friends with Chef Mathieu so, with a little assistance, a reservation was made and a personal introduction ensued – – lucky us!!!!

Located in the Place des Vosges, L’Ambroisie represents that thin space between heaven and earth for those of us who desire to achieve nirvana via haute cuisine.  A place where you not only experience wisdom, creativity, passion and art but, you also have the opportunity to witness legacy – – that between a father and son.  As you enter décor galore, one can not help but to feel exalted in such opulence.  From the well appointed crystal chandeliers, that create a magical atmosphere of twinkling stars, to the elaborate tapestry that greets you as you enter the first dining chamber, you immediately know that you’ve arrived.  We were politely escorted to the second dining room which held five tables.  I absolutely adored the privacy of this elegant room which was ideal for that which was about to be consumed.  First we started with a delightful bottle of 2002 Domaine Runiart followed by glasses of Domaine Leflaive Meursault, Domaine Pierre Gelin Fixin 1er Cru & Fournier Sancerre.  This warm and regal setting was just divine as we experienced encrusted escargot unlike any other, langoustines with sésame and curry sauce, tender and succulent veal and delicious desserts paired with the remaining Domaine Runiart.  This thin space between heaven and earth was captivating.  As I journey forward in search of new and exciting cuisine,  my experience at L’Ambroisie shall be close at hand.  Do find time to visit this jewel – – after all Ambrosia is the nectar of the gods and the gods know greatness when they taste it!!!!
