Ducasse Baccarat – Paris

There is something wonderfully liberating about a dining experience that refuses to follow convention. At Ducasse Baccarat, my first exceptional meal in Paris during this past visit, Alain Ducasse once again reminded me why I have been such an admirer of his culinary philosophy for years.

We went for lunch and returned for dinner. Beneath the crystal rain of Baccarat, the cuisine moves with an almost instinctive rhythm. Christophe Saintagne and Robin Schroeder, French culinary collaborators who helm the kitchen, have created alongside Ducasse a spontaneous, interactive expression in which dishes complement, react to and occasionally collide with one another. Schroeder’s own journey under Saintagne adds another beautiful layer to this evolving culinary conversation.

What I found most compelling was the sense of movement: nothing static, nothing overly orchestrated, yet every element possessing intention.

After experiencing the Ducasse philosophy from Monaco to Paris, Ducasse Baccarat felt like another chapter in a journey I have long appreciated—craftsmanship, creativity and refinement, with just enough surprise to keep the table wonderfully alive. Another must when in Paris!!!!
