As the Executive Chef at the W, Chef Esko is responsible for sixty full-time cooks and twenty stewards, as well as oversight of all culinary offerings in the W’s outlets and banquet department. This also includes an impressive large ballroom which seats around 700+ guests with panoramic views of the Mediterranean sea. I’ve always been impress with his cuisine, but after touring the property with Chef Esko and meeting several of the chefs and stewards that keep this amazing property’s in demand cuisine at guests’ fingertips, I have a newfound respect and admiration for his generosity, professional integrity and business savviness. I had no idea how massive of an operation Jakob was managing. This behind the scene experience reinforced that which I’ve always treasured and continue to spotlight when time and chefs permit – – “The Dedicated and Passionate Work Force Behind the Scene.”
Having the pleasure to meet and over the course of ten days, get to know Chef Esko’s team made all the difference in our experience. The saying, I’ve never met a stranger was definitely my mantra throughout the stay at the W!!!!
The following are gems to be experienced while relaxing and letting go at the W – – Restaurant WAVE, run by Chef Juan Luis Herrera, serving up casual Mediterranean cuisine with the best local produce. Restaurant BRAVO, managed by celebrity Chef Carles Abellan and his Chef de Cuisine Luis. And then there’s SALT, managed by Chef Sergio Dominguez creating casual food to share and creative hamburgers which I could not get enough of, all made fresh in house.
