Thanks to my friend Michael Scaffidi, Wine Director & Sommelier at Plume in The Jefferson, I had the opportunity to experienced an incredible Grüner Veltliner from Loimer last week.  I immediately fell in love with the tangy acidity, delicate fruit and slight minerals this refreshing Grüner displayed.  So, with my daily visit to BlackSalt, I was able to recreate that wonderful experience by using one my favorite appetizers, Thai shrimp spring rolls – – perfect & delicious  symmetry at work.
